Clear, unaged Tequila that is normally bottled right after being distilled. When the clear white Tequila drips from the cooling coils of the alambique, it is correctly called silver or plata, but is more commonly called white or blanco. All Tequila begins as white Tequila and color comes with barrel aging.
The first definitive level of aging is termed reposado or rested and mandates that the Tequila remain in wood for a period of two months but no longer than 12 months. This is a requirement of the Mexican government and each distillery has its own preference for the type of barrel used in aging. Some of the most common are made from French oak or white oak.
The next level of aging is the Añejo Tequilas. Añejo, which means “old” or “mature”, can only appear on bottles that contain Tequila, aged in oak barrels having a maximum capacity of 600 liters for a minimum of one year. This is a requirement of the Mexican government and a year of resting in a cool bodega produces a smoother and more sophisticated taste. American whiskey barrels, French oak casks, or cognac barrels, are commonly used to age this Tequila. Añejo are typically aged between one and six years. They are darker in color, more complex in flavor, and smoother than reposado Tequilas.
Another name for maguey plant. Also the generic name for all spirits distilled from the agave, as well as the name of a regional beverage, similar to Tequila, but made mostly in the state Oaxaca. Mezcal is not the same as Tequila — the two should never be confused. Mezcal is similar to Tequila in that it can be distilled from blue agave, although it seldom is, but it is distilled only once, unlike Tequila which is distilled twice. Mezcal can be made from any species of the agave plant (most typically from El Moraleño, Espadín de Oaxaca, Bermejo and Zopilote) in any part of Mexico. (If you were looking for the worm, you’ve found it—mescal is often bottled with a worm.) Technically, Tequila is a form of mezcal. Mezcal is native to the states of San Luis Potosi, Michoacan, Jalisco, Durango, Morelos, Nuevo Leon, Oaxaca, Tamaulipas and Zacatecas.
The NOM is the Official Mexican Standard of Tequila that is regulated by the Mexican Government, which contains specifications to be followed by all individuals and companies producing Tequila. In short, the NOM ensures the protection of the Appelation of Origin, regulates production, and continually establishes standards required to ensure quality. Those companies that comply with the regulations setforth by the Tequila NOM are then certified by the TRC (Tequila Regulatory Council), and labeled as an authentic Tequila producer.
